Smashed Chickpea Salad Sandwich

This delightful, creamy salad makes a delicious sandwich or snack.




Makes: 2 Sandwiches

Prep Time: 10 minutes

Total Time: 10 minutes


Ingredients

1 can of chickpeas, drained and rinsed

1/4 cup of finely chopped dill pickles or dill relish

1/4 cup of finely chopped red onion

2-3 tablespoons vegan mayo*

2 1/2 teaspoons of stone ground mustard

1 1/2 teaspoons apple cider vinegar

2 teaspoons of fresh chopped dill

a dash of turmeric

salt and pepper to taste


  1. Use a potato masher or fork to roughly mash the chickpeas. They should be mostly smashed with a few chunks left.

  2. Add the rest of the ingredients, mix well, and adjust the seasoning as needed.

  3. Enjoy the salad as is or as a sandwich with lettuce and tomatoes.


Recipe Notes

*I recommend Just Mayo, it's rich and flavorful and will add a nice creaminess to the salad. Fabanaise also has a vegan mayo that is tasty. It's not as creamy as the Just Mayo but it will do the job.
